Hollow out aubergine ( very carefully so skin isn't pierced).
Chop flesh and stir-fry with garlic and pepper or onion
(or add any other colorgul veg you'd like).
Place cooked veg into aubergine shells.
Top with halved baby tomatoes and add grated cheese
(cheddar or mozzarella, basil and parmessan or vegan alternative).
Bake for 30 mins in oven 180 dgs
